The summit's enlightening discussions laid the groundwork for a more vibrant culinary future in India

The inaugural day of the NRAI Indian Restaurant Summit 2023 in Kolkata marked a momentous occasion for the culinary industry with the significant event, characterised by a focus on innovation, inclusivity, and sustainable growth, initiated a nationwide movement aimed at reshaping the restaurant industry's role in India's economic landscape.

Themed Cultivating Excellence, the summit's enlightening discussions laid the groundwork for a more vibrant culinary future in India. The day began with a deep dive into topics crucial for the industry's growth. Leaders in the field pondered the evolving dynamics of customer expectations and the pivotal role of adaptability in a rapidly changing world during a session titled Agility is not taught; it's acquired - the new mantra of hospitality and retail.

Under the visionary guidance of Sagar Daryani, Vice President of NRAI and co-founder/ CEO of Wow! Momos, the summit transformed into more than just an event; it became a national movement. Daryani expressed his passion, stating, "The NRAI Indian Restaurant Summit is not merely an event; it's a catalyst for profound change. We're fostering innovation, inclusivity, and sustainable growth within our dynamic industry. Our vision extends beyond Delhi and Mumbai; we're nurturing chapters across the country and envisioning grand events in Chennai, Bengaluru, Bhopal, and beyond."

The summit also delved into complex topics, exploring whether "Food is theatre in the Instagram world and not only taste anymore," and emphasising the power of data in a panel discussion titled "Data is food, not fuel anymore!" Leaders from renowned companies explored the sensory aspects of dining experiences and discussed how restaurants could harness data to optimise operations and enhance customer satisfaction. Additionally, the summit paid homage to the past, celebrated the present, and envisioned the future in a discussion titled "Indian Restauranting: Yesterday, Today, and Tomorrow." Industry stalwarts explored concepts such as "Make in India" and "Made In India," recognising the immense potential of Indian restaurants to shape global culinary narratives.



Led by Zorawar Kalra, the summit recognised the rise of the chef-restaurateur, emphasising the delicate balance between culinary creativity and financial success. The event didn't just end with discussions; it empowered the future of the restaurant industry through workshops like "Fuel up your Food Start-up" and "Managed Compliances under Goods and Services Tax for the Restaurant and Brand Owners," providing entrepreneurs with essential knowledge and tools.

Kabir Suri, President of NRAI, laid emphasis on the summit's role in propelling India's economic growth. He stated, "The NRAI summit heralds an era where gastronomy meets nation-building. It transcends the realm of food; it's about cultivating an environment where the Indian restaurant industry thrives." Riyaaz Amlani, Founder and Managing Director of Impresario Entertainment & Hospitality Pvt Ltd, echoed this sentiment, calling the summit a movement to redefine the industry, tackle challenges, and create experiences that transcend boundaries and generations.

Kalra, Founder and Managing Director of Massive Restaurants Pvt Ltd, and Founder of Indigo Hospitality Pvt Ltd, passionately declared, "Our journey as restaurateurs mirrors the transformation of our nation. This summit is a clarion call, a national movement that recognises the immense potential of Indian restaurants to shape global culinary narratives."

As Day 1 concluded, the culinary community united on a cruise party at the Bengal Paddle Jetty. This vibrant gathering featured a cocktail night, an enchanting Hum-Sufi Band, and an electrifying musical night, marking the perfect end to a day of insightful discussions and visionary ideas.
