Procurement still remains a big challenge to the industry

Neeraj Tyagi, Executive Chef, Shangri- La at The second BW Hotelier Indian Hospitality Summit & Awards said “The current trend is all about procurement, one of the biggest challenge to source out all the ingredients in India. Government should support in getting all those, there are things which you can’t grow in India. Right now there is a lot of emphasis on localization so that we can get those premium ingredients here by raising the bar of our infrastructure. Chefs in India are very talented but they need a lot of support in terms of procurement.
