New Faces at JW Marriott Mumbai Sahar

Romano’s, the Italian restaurant gets a new mixologist, Colette Pereira (photo left). With over 15 years of experience in administration, marketing and publicity, Pereira now looks into the innovations and research at Romano’s Lab.

Pereira wants to change the way guests perceive a bartender; according to her most guests expect the bartender to pour a drink or entertain them with fairing. She believes that every bartender can make great cocktail, but what’s missing is the art of mixing the cocktail, and that’s where she wants to excel by making a holistic approach with sight, smell and taste.

Pereira started her stint with bartending as an assistant bartender with Hakkasan Mumbai, where working with Asian and international flavors which enhanced her ability to make delicious and balanced drinks.

Amitesh Virdi (photo right) was appointed as the Executive Sous Chef of the hotel. With 14 years of experience, Virdi has expertise in kitchen operation, deployment and training, equipment planning, F&B Standard Operating Procedures, understanding and implementing food safety compliances. -Virdi has fined tuned his culinary skills at restaurants in many prestigious hotels like China House Restaurant and Celini Restaurant at Grand Hyatt Mumbai, Glasshouse Restaurant at Hyatt Regency, Mezzo Mezzo Restaurant at JW Marriott Mumbai Juhu, Brix Restaurant at Grand Hyatt Delhi and Le Meridien, New Delhi.

Prior to his appointment as Executive Sous Chef at JW Marriott Mumbai Sahar, Virdi served as Executive Sous Chef at Grand Hyatt, Mumbai.
