Fast for the Feast: Navratra Menu at Indian Accent

An innovative menu by Chef Manish Mehrotra can make you fast for the feast with a 13-course vegetarian meal served from March 18- April 4, 2018.

IF YOU'RE visiting the marquee restaurant Indian Accent at The Lodhi this Navratra, chances are that you might like to relish an interesting pop-up especially curated for vegetarian lovers. Chef Manish Mehrotra has introduced a new menu to make you fast for the feast. Moving away from the traditional thali, Chef has taken an inventive approach to offer a first-of-its-kind 13-course Navratra Menu in the intimate dining space, Upstairs at Indian Accent.

So his kitchen is experimenting with the traditional satvik ingredients with innovative features like: ‘Chaat’ - Avocado, Pomelo, Radish, Nut And Kuttu Papdi; Sweet & Sour Pumpkin, Quinoa, Tulsi Almond Crumble; Gobhi Musallum, Saffron; Baked Beetroot, Candy Walnut, Yogurt; Shrikhand, Amarantha Toffee, amongst other dishes.

“We are delighted to bring this time the curated menu of the vegetarian feast for the diners. But all this was challenging to work as one had to think of apt ingredients that work best for Navratras. The dishes are creative yet maintain their traditional integrity,” explains Chef Mehrotra as he ensures to have a rendezvous with every single guest while serving the course.

The food presentation is eye-catching and stylized that essentially defines the Indian Accent version of Navratra food, and not to forget is the bite-sized small portions of meals carefully chosen with apt tableware. “The idea is to spice up your idea of an ideal meal with the right kind of amenities and ingredients to suit the festive spirit,” he says.

So when we asked Chef on how he has made this interesting concept of serving small and delicate portions of satwik food in a non-thali format, he explains, “There has been a different interpretation of Navratra food in the past few years. Nowhere I could find the real dos and don’ts of the festival. Also, there are a lot of restrictions in the choice of the ingredients - no tomato, lentils, onion, wheat and garlic - so this inventive menu is a culmination of a lot of research, hard work and understanding of taste and the concept.” For instance, the preparation of Baked Beetroot, Candy Walnut, is a one-and-a-half-day process to slice the layers, dress it up, and add flavours to make a unique combination of global ingredients and techniques for a fresh local produce like beetroot.

The Navratra Tasting menu can be savoured not just during Navratras but for an extended period of three weeks. It is exclusively served at Upstairs at Indian Accent during lunch as well as dinner.
